Kitchen Staple Cooking Vol 1: Potatoes

Regularly, the Fennigan’s Farms team experiments in the kitchen. Here we help you tackle kitchen issues by posting what we come up with here. our goal is to inspire you with fun new ideas in the kitchen, as well as educate you on the versatility of the food you can find in your produce section and plant in your garden.

This week our Fenn Farms team played around with an old favorite… the potato! This simple vegetable is not only nutritious but extremely versatile AND has the added benefit to being available all year round. it’s a produce staple perfect for any kitchen. We experimented with three different recipes:

1. Skillet Potatoes

2. Potato Tacos

3. Shoestring Fry and Steak Tacos.

Skillet Potatoes

are super easy to make. We took an easy dish and spiced it up with some new flavors, and you can make this for breakfast, lunch, or dinner depending on how you season this dish.

This is good enough as a side, or to eat as a main course. We took this simple dish and added flavors of salt, pepper, and cumin to later use in a hash for our potato tacos.

All you need to do is dice up your spuds, and let sit on medium heat until the cubes are soft, or about 20 minutes covered. From there, add in your seasonings.

Serving Suggestions:

Base for Tacos

Side dish for steak or other proteins

Add eggs, pepers, and onions for a quick breakfast hash

Potato Hash Tacos

Next, we took our skillet potatoes and used them as our base for tacos. In order to make this dish at home, follow the steps below.

First, cube then cook your potatoes for 20 minutes, covered, on medium heat. After 10 minutes, add in half of your onion and your spices, stir, and continue cooking.

In a medium sized bowl, add in both of your diced tomatoes, the rest of your onion, lemon juice, and salt to taste. Mix and let sit covered in the refrigerator until you are ready to serve. When you have about 2 minutes left on your potatoes, heat your tortillas in another skillet. If you used hard shells, follow the directions on the box to make sure they are warm and cooked before you add in your potatoes.

Add your cooked potatoes first, followed by shredded lettuce, and finally your tomato salsa. We topped our tacos with a salsa verde, but you can add any flavor or topping you like! Take a bite and enjoy this delicious vegetarian option.

Ingredients:

3 Medium Potatoes (We honestly used the cheapest option. Use what you have available in order to eliminate food waste and to stay within your budget)

8 Small tortillas or shells

2 Medium tomatoes, diced

1 Onion, diced

1-1.5 Cups shredded lettuce

Salt to taste

Pepper 4 teaspoons

Cumin 1.5 Tablespoons

Lemon Juice 2 Tablespoons

Shoestring Fry and Steak Tacos

Lastly, we took the left over potato shavings and used them as a garnish for our steak tacos. With a little olive oil and the Air Fryer we were able to create an awesome side dish.

Simply season your steak or other proteins the way you love it.

While cooking your protein, shred your potatoes into thin ribbons.

Soak the ribbons in cold water with a dash of salt for 5 minutes.

After, drain the spuds, pat dry, then drizzle about 2 tablespoons of olive oil on them and toss.

Spread them out across the pan for your Air Fryer and fry at 400F for 8 minutes or until crispy and golden.

Use the crispy potatoes to top your tacos or as crunchy side.

Here are a few quick potato facts:

1. According to the United States Department of Agriculture, potatoes are the No. 1 vegetable crop in the country.

2. Potatoes have a tiny bit (usually 3-6 grams) of protein.

3. Your spud friends are RICH… in vitamins and nutrients. Such as, potassium, iron, vitamins B and C, and fiber.

4. Soaking cut potatoes in cool water with a pinch of salt before cooking helps to reduce the AMOUNT of starch in them.

5. To prolong the shelf life of your potatoes for up to 3 months, make sure they stay in a cool, dry, and dark place.
